Detroit-style pizza: the story starts at the edges
A Detroit-style pizza announces itself at the edges: a dark, crisp border around a deep, square-cut pie. Inside that frame is a softer, chewy crumb. The contrast gives the style its character—and makes the corner slice a useful place to begin.
A Motor City beginning
Buddy’s traces the style’s beginning to 1946, when Gus Guerra made a square pizza at Buddy’s Rendezvous on Six Mile and Conant in Detroit. Its account connects the bake to forged-steel pans borrowed from local automotive plants, bringing a piece of the city’s industrial world into the kitchen.
That history also has a culinary connection: Buddy’s describes the influence of Sicilian square pizza. Detroit’s contribution was a particular combination of dough, pan and layering that became a recognisable local tradition.
Built from the bottom up
The pan matters, but so does what goes into it. Buddy’s describes dough that rises and is stretched twice. Detroit Style Pizza Co. explains another hallmark: cheese reaches right to the edges, while red sauce goes above the cheese and toppings.
Its description includes pepperoni beneath the cheese and a traditional mixture of brick cheese and mozzarella. This arrangement helps explain the names “red top” and “upside-down” pizza. It is a useful introduction to the style, rather than a promise that every pizzeria follows exactly the same recipe.
Start with a corner
When exploring a Detroit-style pie, notice three things: the browned cheese around the perimeter, the texture of the dough inside, and the position of the sauce. A corner puts two edges into one slice; a centre piece offers a different balance of crust and topping.
Those differences make sharing a pie part of the discovery. Compare the pieces and decide which combination you enjoy most.
