Naples: The Craft Behind Neapolitan Pizza

A pizza can introduce you to a place. In Naples, it can also introduce you to a craft passed between people: the work of the pizzaiuolo.

A living tradition

In 2017, UNESCO inscribed the art of the Neapolitan pizzaiuolo on its Representative List of the Intangible Cultural Heritage of Humanity. The recognition concerns the knowledge, skills and social life surrounding pizza making. It is not an award for an individual restaurant, nor a certification attached to every pizza.

UNESCO describes a tradition involving masters, pizza makers, bakers and families who practise it at home. Looking at pizza this way shifts attention from the finished dish to the people who keep the craft alive.
